Peanut Butter Banana Chocolate Chia Parfait – a hearty, delicious breakfast that also works as a dessert. Vegan, gluten-free, and soy-free.

Hello! I’m just returning from Miami (I’m actually on a plane as I write this) and I’ve been excited to share this post with you. Before Expo West, I teamed up with the guys from The Vegan Zombie to film a cooking video, and it’s finally ready.

When Chris and John and I discussed recipes, we wanted something simple, filling, and irresistibly tasty. Chia pudding instantly came to mind, but we gave it a parfait twist for extra flair. And you can’t go wrong with peanut butter, chocolate, and banana together!

Like the Zombie team have Indy, the German Shepherd, I have Bandit—my loyal, apocalypse-ready pup. He’s always up for action… or maybe just a nap.

Watch the video for a fun, step-by-step demonstration on making this parfait.
