Description

This is a simple, healthy waffle recipe made with whole wheat flour and a few wholesome add-ins. It produces flavorful, hearty waffles that are filling and easy to prepare.


Ingredients

  • 2 eggs, beaten
  • 1 ¾ cup milk (unsweetened almond milk or other milk)
  • ¼ cup coconut oil, melted
  • ¼ cup unsweetened applesauce
  • 6 oz Greek yogurt (any flavor; plain works well)
  • 1 ¾ cup whole wheat flour
  • ¼ cup ground flaxseed
  • 1 Tbsp honey
  • 2 tsp baking powder

Instructions

  1. Whisk or mix all ingredients together in a large bowl until combined and smooth.
  2. Preheat and lightly grease your waffle iron.
  3. Pour batter into the waffle iron and cook according to the manufacturer’s directions until the waffles are golden and cooked through.

Notes

This recipe made six large waffles with my waffle iron. If you prefer smaller portions, you can make more waffles by using less batter per waffle. To freeze, cool completely, place waffles in a single layer on a sheet until firm, then transfer to a sealed bag or container. Reheat from frozen in a toaster or oven.
