There’s nothing better on a hot Friday than a refreshing cocktail—especially when it doubles as a frozen treat. With summer heat already here, I’m leaning on cold desserts to get through the season. These Strawberry Daiquiri Popsicles are a simple, boozy solution: all the bright strawberry and lime flavor of a daiquiri, frozen into a convenient popsicle. They’re lightly sweetened with agave, so you don’t need extra sugar, and they feel indulgent without being heavy.

Because classic daiquiris are already blended and served frozen, turning one into a popsicle is effortless. I find myself tempted to grab one as a late-night snack—then remember the rum. If you prefer a non-alcoholic version, it’s easy to swap the rum for sparkling water, regular water, or ginger ale for the same refreshing texture. These popsicles also make a great base for variations: peaches or raspberries would be fantastic next experiments. Expect to see a lot of daiquiri popsicles this summer.

Ingredients
- 1 lb. hulled strawberries
- 1/2 cup rum
- 1 lime, juiced
- 1/4–1/3 cup agave nectar (adjust to taste)
Instructions
- Add all ingredients to a blender and blend until smooth.
- Pour the mixture into popsicle molds or small cups and freeze for at least 4–6 hours or overnight.
Notes
