  • 2 jumbo sweet potatoes peeled & diced
  • 1/8 cup maple syrup
  • 2 tbsp brown sugar
  • 3 tbsp butter unsalted
  • salt and pepper, to taste

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a small saucepan over medium heat, combine the maple syrup, brown sugar, and butter. Bring to a gentle boil, stirring until the sugar and butter melt and form a smooth glaze.
  • Place the peeled and diced sweet potatoes in a buttered 8 x 11 x 2-inch baking dish.
  • Pour the hot glaze evenly over the sweet potatoes, tossing lightly to coat if desired.
  • Bake for about 30 minutes, or until the sweet potatoes are tender and the glaze is bubbly and caramelized.
