How to Make Kale Leaves Soft and Tender

Work the avocado thoroughly into the kale until the leaves are glossy and soft. Serve within an hour if possible; the avocado will gradually darken as it oxidizes.

Ingredients

  • 2 avocados
  • 1 large bunch kale (about 1/2 lb • 227 g), ribs and tough stems removed
  • Zest of 1 lemon
  • 1 tablespoon fresh lemon juice, plus more to taste
  • 2 teaspoons sea salt, or to taste
  • Freshly cracked pepper, to taste
  • 1 cup freshly grated Parmesan cheese (omit for a vegan version)

Optional

  • 1/4 cup toasted nuts (sliced almonds, cashews, pistachios, chopped pecans, etc.)
  • 1/4 cup raisins or other dried fruit (dried cherries, chopped apricots, etc.)

  • Thinly slice the kale into ribbons and place the leaves in a large mixing bowl.

  • Halve the avocados. Chop one avocado into bite-sized pieces and reserve for stirring in just before serving. Add the other avocado in chunks to the kale and gently massage it into the leaves until they become tender and slightly glossy.

  • Add lemon zest, lemon juice, salt, and pepper. Taste and adjust seasoning as needed with more lemon juice, salt, or pepper.

  • Just before serving, gently fold in the grated Parmesan, the reserved chopped avocado, and any optional nuts or dried fruit for texture and contrast.

Notes

To toast nuts: For stovetop toasting, warm a dry skillet over medium heat and shake or stir frequently until the nuts are lightly golden and fragrant. For oven toasting, spread nuts on a baking sheet and bake at 375°F (190°C) for about 8–12 minutes, checking frequently to prevent burning.
