How to Make a Western Omelette (Denver Omelette)

The Western omelette is fast and forgiving, which makes it ideal for weekday mornings. It’s a low-carb option rich in protein and vegetables, and it can be scaled up or down easily. Below are the streamlined steps and an ingredient list so you can prepare a flavorful omelette in about 20 minutes.

What You’ll Need

  • 1 tablespoon butter
  • 3 large eggs
  • 1/2 cup finely chopped onion
  • 1/4 cup finely diced green or red bell pepper
  • 1/4 cup cooked ham, chopped
  • 1/4 cup sharp cheddar cheese, grated
  • Salt and pepper to taste

Getting Started

  1. Crack the eggs into a medium bowl and beat them until blended. Set aside.
  2. Heat an 8-inch skillet over medium heat and melt the butter.
  3. Add the chopped onions and sauté until they begin to soften and become translucent.
  4. Add the diced bell pepper and cook until the onions are tender and the peppers are tender-crisp.
  5. Stir in the chopped ham and cook for another minute to warm it through.
  6. Pour the beaten eggs over the hot ham and vegetable mixture, tilting the pan so the eggs spread evenly.
  7. Reduce the heat to low, cover the pan, and cook for about 4–5 minutes until the eggs are mostly set.
  8. When the eggs are firm on the bottom and nearly cooked through on top, flip the entire omelette and cook for roughly one more minute to finish the other side.
  9. Place the grated cheddar on one half of the omelette and fold the other half over it to form a half-moon.
  10. Allow the cheese to melt for a minute, then slide the omelette onto a plate and serve hot.

A key tip: make sure both sides of the omelette are cooked before you add the cheese and fold it. Folding too soon can leave the center undercooked. The cheese will melt quickly, so check that the eggs are evenly set before folding.

Doesn't that look delicious?

Tips & Tricks for a Great Western Omelette

  • Finely chop the onion: smaller pieces cook faster and give a better texture. Raw, large chunks of onion can be harsh in an omelette.
  • Adjust the cheese to control carbs: different cheeses have different carb counts, so check nutrition if you track carbs closely.
  • Use leftover ham: diced leftover ham from dinner works perfectly, or use pre-cooked packaged ham for convenience.
  • Temperature control matters: cook the vegetables over medium to develop sweetness, then lower the heat before adding eggs so the omelette cooks gently and doesn’t brown too much.
  • Variations: swap ham for cooked bacon or turkey, add mushrooms or tomatoes, or use pepper jack for extra heat.
