Chocolate Peanut Butter Ritz Cracker Crunch Recipe

It’s time for another Peanut Butter Bash! This version features peanut butter and Ritz crackers. I used peanut butter chips instead of plain peanut butter for convenience, and the result is a quick, irresistible treat often called “cracker crack.”

If you use a toaster oven, you’ll appreciate how versatile it can be. My mom often cooked in a toaster oven to avoid heating the house, and I do the same—everything from cookies to small casseroles. If you don’t have one, a small cookie sheet in a regular oven works fine; just consider doubling the recipe for a full-size pan.

For toaster-oven baking I keep small pans that fit perfectly. A basic small cookie sheet is ideal for this recipe, which yields a small batch that’s great for sharing—or not.

Chocolate Peanut Butter Ritz Crack


Ingredients

  • 20 Ritz crackers
  • 1/2 cup brown sugar
  • 2 tablespoons whipping cream
  • 4 tablespoons butter
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter chips
  • 1/2 cup toffee chips

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Line a cookie sheet with foil and spray lightly with nonstick spray.
  3. Arrange 20–25 Ritz crackers in a single layer on the prepared sheet.
  4. Combine the brown sugar, whipping cream, and butter in a microwave-safe bowl and microwave for about 5 minutes until bubbling and combined.
  5. Carefully remove the hot sugar mixture from the microwave, stir, and pour evenly over the crackers.
  6. Work quickly to spread the caramel over all the crackers before it thickens.
  7. Bake in the toaster oven or regular oven for about 5 minutes; the sugar mixture will bubble.
  8. Remove the pan and immediately sprinkle peanut butter chips, toffee chips, and chocolate chips evenly over the hot crackers.
  9. Let the chips sit 2–3 minutes to soften, then spread the melted chips to fully cover the crackers.
  10. Place the pan in the freezer for about 30 minutes to set.
  11. When the chocolate has hardened, break the sheet into pieces using the end of a utensil or by hand.
  12. Serve and enjoy.

Use foil and a light spray of oil—this makes removing the finished cracker crack from the pan much easier.

Some recipes make the caramel on the stove, but microwaving the sugar, cream, and butter is faster and easier—no constant stirring and less risk of burning, similar to microwave pecan pralines.

As soon as the caramel is hot, work quickly before it thickens—pour and spread it over the crackers right away.

Bake briefly until the caramel bubbles, then remove and add the chip toppings. The heat will melt them just enough to spread.

After the chips melt, spread them to create an even topping, then chill in the freezer for about 30 minutes for a quick set.

Once firm, break into pieces about 2×2 or 2×3 inches—perfect for snacking with a glass of milk. This treat is dangerously addictive; in my house it disappears fast.
