Belize- Fry Jacks
Ingredients
- 2 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 Tablespoon vegetable shortening
- 1 cup water
- Vegetable oil for frying
- Honey to drizzle
- Powdered sugar to sprinkle
Instructions

Sift the flour, baking powder and salt together into a bowl.

Cut in the shortening (or butter) with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Gradually add the water, mixing by hand until the dough is soft but not sticky. Add slightly more or less water if needed.

Divide the dough into two rounds for easier rolling.

Cover and let the dough rest for about 30 minutes.

On a lightly floured surface, roll one round of dough to roughly 10–12 inches in diameter.

Cut the rolled dough into 2–3 inch strips lengthwise, then cut crosswise into squares or triangles to your preferred size.

Heat vegetable oil until very hot (but not smoking). A deep fryer or a heavy pot works well. Proper oil temperature helps the fry jacks puff up when they hit the oil.

Fry the pieces in batches, turning once, until golden brown on both sides. Drain on paper towels.

Serve hot with a drizzle of honey and a sprinkle of powdered sugar.
