How to make Low Carb Chicken Lettuce Wraps
1. Dice the red bell pepper and the green onion. Reserve half of the green onion for garnish.

2. Heat the canola oil in a medium skillet over medium heat.
3. Add the garlic, ginger, red bell pepper, and half of the diced green onion. Sauté 3–5 minutes, stirring occasionally, until the pepper softens. Remove the vegetable mixture and set aside.

4. In the same skillet, add the ground chicken and cook, stirring occasionally, until no longer pink, about 5 minutes.

5. Return the cooked vegetables to the pan with the chicken.

- 1 green onion
- ⅛ cup hoisin sauce
- ½ Tbsp soy sauce
- 8 large Boston lettuce leaves (or Bibb)
- ¼ cup cashew halves
- Hot sauce or red pepper flakes (optional)
