Hello! I’m just returning from Miami (I’m actually on a plane as I write this) and I’ve been excited to share this post with you. Before Expo West, I teamed up with the guys from The Vegan Zombie to film a cooking video, and it’s finally ready.
When Chris and John and I discussed recipes, we wanted something simple, filling, and irresistibly tasty. Chia pudding instantly came to mind, but we gave it a parfait twist for extra flair. And you can’t go wrong with peanut butter, chocolate, and banana together!
Like the Zombie team have Indy, the German Shepherd, I have Bandit—my loyal, apocalypse-ready pup. He’s always up for action… or maybe just a nap.

- 2 T. creamy peanut butter
- 1 T. maple syrup
- 1/4 tsp. vanilla extract
- 1 medium or large banana, sliced
- 2–3 T. chocolate chips
