Croissant French Toast Recipe: Crispy, Fluffy Brunch Favorite

Croissant French toast — absolutely delicious. There’s something special about a relaxed Saturday morning, pulling a bag of slightly stale croissants from the pantry and turning them into a rich, buttery, melt-in-your-mouth French toast. It’s indulgent, comforting, and worth every bite.

One of our favorite weekend treats is this gooey, syrupy croissant French toast. It pairs beautifully with a fruit smoothie for a complete morning treat.

The idea for croissant French toast started when Hugo brought home a bag of mini croissants from a work event. Several went uneaten, and with a few left over we decided to reinvent them as French toast. The result was so good we’ve been making it ever since.

Since that first Saturday, this croissant French toast has become our preferred way to enjoy French toast. It’s simple to prepare, a little different from the classic, and perfectly balanced between sweet and rich.

Description

This twist on a breakfast classic is quick to make and deeply satisfying — ideal for a cozy weekend morning. The croissants soak up the custard, then crisp on the outside while staying tender inside. Serve with powdered sugar and maple syrup for maximum indulgence.

  • 6 mini stale croissants
  • 1 egg
  • 7 oz milk
  • 1 teaspoon vanilla sugar (or vanilla extract)
  • Butter, for greasing the pan
  • Powdered sugar, for serving
  • Maple syrup, for serving

Instructions

  1. Leave croissants uncovered overnight (two nights if possible) so they become slightly stale and firmer — this helps them hold the custard without falling apart.
  2. In a large bowl, whisk together the egg, milk and vanilla sugar (or extract) until combined.
  3. Using tongs, dip each croissant into the egg mixture, turning continuously until it’s well coated but not soggy.
  4. Heat a non-stick frying pan over medium heat and add a little butter to grease the surface.
  5. Place the coated croissants in the pan using tongs, giving them space so they brown evenly.
  6. Cook until golden brown on one side, about 3 minutes, then flip and cook the other side until golden (around 3 minutes more).
  7. Transfer to a plate, drizzle with maple syrup, and dust generously with powdered sugar.
  8. Serve warm and enjoy — croissant French toast is ready!
