This Tuna Dijon Burger is a great alternative to beef. Sourcing tuna that is wild caught & sustainable is a good choice.. and it’s tasty!

I’ve been a bit absent from posting for #Waunstrong Wednesday — life and a changing living situation have made regular updates harder — but I couldn’t resist sharing this Tuna Dijon Burger recipe. It’s a flavorful, healthy alternative to a traditional beef burger, and using wild-caught, sustainably sourced tuna makes it an even better choice.
I received a few helpful recipe ideas from the Cancer Treatment Centers of America and, serendipitously, Wild Planet offered me a chance to try their tuna. That combination felt like perfect timing. Years ago I ate plain tuna mixed with mayonnaise, celery and onion out of habit, but this recipe introduced me to new flavor pairings that transformed the humble can of tuna into something special.
Wild Planet buys fish directly off the boats, and many of the boat owners are shareholders in the company. They emphasize sustainably caught seafood and support conservation of wild marine ecosystems. As I learn more about ethical fishing and sustainability, I appreciate brands that make those practices a priority. A few points I found notable:

- Wild Planet sources tuna only from pole-and-troll fisheries.
- Pole-and-troll catching is widely rated as one of the best methods for tuna by seafood and conservation organizations.
- The company does not source fish from long-line or purse-seine fisheries.
- Wild Planet reports offering 100% sustainably caught products, distinguishing it from some brands still transitioning to sustainability standards.
Because Wild Planet controls selection and packing, they can ensure high-quality product standards that show up in the flavor.

All of the sustainability information is meaningful, but the true test was taste. I was pleasantly surprised by the appearance and flavor of the tuna straight from the can. The Tuna Dijon Burger recipe showcased the fish beautifully: low in fat, full of flavor, and in line with the nutritious recipes I’ve received from CTCA. It’s one of those dishes that’s both delicious and healthy.
Health benefits of deep-sea fish such as tuna include:
- Good source of potassium — supports brain function, muscle contraction, and metabolic processes.
- High in omega-3 fatty acids — helps maintain heart and brain health, supports insulin regulation, and promotes satiety.
- Rich in selenium — supports immune function and cardiovascular health.

I miss the large tarragon plant I left behind when I moved — it paired wonderfully with the tuna in this recipe. I served the patties to friends with a fresh vegetable pasta side and heard repeatedly how much they enjoyed them. The combination of Dijon mustard, tarragon and green onion makes a surprisingly perfect match with the tuna.
I found Wild Planet tuna at Sprouts, and others have reported finding it at Costco as well. I’ll be on the lookout next time I’m there.
For anyone following Lauren’s treatment updates, we’re very grateful that this first round of chemo has been effective — the lump is no longer visible or palpable, which gives us hope. She will still need a lumpectomy and radiation, but with just a few weeks of chemo left, we are thankful for the progress and for your continued support and prayers.

Ingredients
For the Tuna Patties:
- 3 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 1 large egg white
- ¼ cup flax meal I found this at Sprouts in the bins
- ¼ cup bread crumbs
- 2 – 6.5 oz. cans of tuna in water drained and flaked
- ¼ cup chopped green onions
- 1 tsp tarragon
To Make the Patties:
- ¼ cup bread crumbs
- Non stick cooking spray
Instructions

Combine the mayonnaise, Dijon mustard and egg white in a medium bowl. Add the flax meal, 1/4 cup bread crumbs, drained tuna, chopped green onions and tarragon; stir well to combine.

Divide the mixture into four equal portions and shape each into a patty.

Press the remaining 1/4 cup of bread crumbs onto both sides of each patty. Brown the patties on both sides in a non-stick skillet coated with non-stick spray until heated through and golden.

Serve the patties plain or as sandwiches on whole wheat buns with lettuce and tomato.
