PEEPS Blondies – An Easter Treat

Equipment

  • 9 x 13 baking dish

Ingredients

  • 1 1/2 cups brown sugar
  • 1/2 cup butter, melted
  • 1/2 tsp vanilla extract
  • 2 large eggs, beaten
  • 1 1/2 cups all purpose flour
  • 1/2 tsp baking powder
  • 1 cup white chocolate morsels
  • 15-20 PEEPS, chopped (any color combination)

Instructions

  • Preheat the oven to 350°F (175°C). Lightly spray a 9 x 13 baking pan with non-stick cooking spray and set it aside.
  • In a medium bowl, whisk together the brown sugar, melted butter, and vanilla extract. Stir in the beaten eggs until the mixture is smooth. In a separate bowl, whisk the flour and baking powder together. Gradually add the dry ingredients to the wet mixture, stirring with a wooden spoon until a batter forms.
  • Spread the batter evenly into the prepared pan. Bake for 15 minutes. Remove the pan from the oven and evenly scatter the chopped PEEPS across the top. Return to the oven and bake 5–7 more minutes, until the blondies are set and the PEEPS have softened and slightly melted.
  • Allow the blondies to cool completely in the pan before cutting into bars so they hold together. Serve and enjoy this colorful Easter treat.
