How to make Peeps Rice Krispie treats

Grease and line an 8″ (20cm) square tin with parchment paper. Use a small knife to remove the tiny black eye dots from the Peeps if you prefer a smooth appearance. Set up four pans on the stove and add one-quarter of the butter to each pan along with one packet of Peeps (faces removed).

Heat the butter and Peeps on low to medium-low, stirring frequently until the marshmallows melt and combine with the butter. If the melted color looks pale, add a few drops of matching food coloring and stir through. Do not increase the heat — high heat can burn the butter or caramelize the sugar.

Divide the Rice Krispies into four bowls. Add one bowl of cereal to each pot of melted Peeps mixture and stir thoroughly, scraping the bottom of the pan to incorporate all the melted marshmallow.

Use two clean spatulas to spoon alternating dollops of the different colored mixes into the lined tin until all mixtures are used. I built about three layers for a cheerful rainbow effect; try not to place identical colors directly next to each other. If any mix begins to set while working, return it to very low heat for a minute to loosen it.
Once the tin is filled, smooth the top gently with a spatula and leave the tray to set at room temperature for at least two hours before slicing.

Instructions
