Recipe Tips & Variations
- Use any boxed cake mix you like: yellow, chocolate, funfetti, lemon or strawberry all work well.
- Let cookies cool about 10 minutes after baking so they set and don’t fall apart or burn you.
- Customize with mix-ins such as sprinkles, chopped candy bars, chocolate chips or nuts.
- Box sizes vary (about 15–18 oz) but the same measurements in this recipe work with typical sizes—no need to adjust.
- Store leftovers in an airtight container at room temperature for a few days.

How to Make Cake Mix Spring Cookies
Preheat oven to 350°F (175°C).
In a mixing bowl, combine the cake mix, vegetable oil and eggs. Use a hand mixer or stand mixer until the mixture resembles a cake-like batter.
Line a cookie sheet with parchment paper. Using a cookie scoop or a tablespoon, portion about 1 tablespoon of batter per cookie and place them about 1 inch apart on the parchment.

Gently press a few pastel M&M candies onto the top of each cookie. Bake for 10–12 minutes, then remove from the oven and allow cookies to cool on the pan for several minutes before transferring to a wire rack to finish cooling.
Serve plain or with a glass of milk.
