  2. Pour the condensed milk into a shallow, oven-safe tray and cover it tightly with foil. Place that tray inside a larger, deep roasting pan.
  3. Carefully pour boiling water into the outer pan until it reaches halfway up the sides of the tray with the milk, creating a bain-marie.
  4. Bake for about 1 hour 45 minutes, checking occasionally and topping up with hot water if the level drops.
  5. When the milk has turned a deep golden caramel, remove the inner tray from the water bath. Whisk the dulce de leche until smooth, then transfer it to a sterilized jar.
