Crispy baked Parmesan Truffle Fries are a restaurant favorite you can easily make at home with potatoes, Parmesan, and truffle butter.

Ingredients 

  • 3 large russet potatoes, washed and dried
  • 2 tbsp olive oil
  • 3 tbsp black truffle butter
  • 1 tbsp kosher salt
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions 

  • Preheat oven to 425°F (220°C).
  • Cut potatoes into matchstick slices.
  • Place the cut potatoes in a bowl of cold water and soak for 1 hour.
  • Drain and pat the potatoes dry, then return them to the bowl and drizzle with olive oil, tossing to coat evenly.
  • Arrange the potatoes on a parchment-lined baking sheet in a single layer without overlapping.
  • Bake for 15 minutes, flip the fries, then bake another 15 minutes or until they are crisp and golden.
  • While the fries finish, melt the truffle butter briefly in the microwave or in a small saucepan.
  • Remove fries from the oven, drizzle with melted truffle butter, season with salt, and sprinkle with Parmesan.
  • Garnish with chopped parsley and serve immediately for best crispness.

Notes

Potatoes can be cut and soaked up to 24 hours ahead of time.
