This baked sea bream is a fast, comforting meal that comes together in under an hour and tastes like you spent much longer preparing it.

It was a frosty morning when I wrote this, and while I’m still hoping for snow, a simple, warming lunch was in order. This baked sea bream is ideal: quick to prepare, healthy, and full of fresh flavour. From start to finish it takes about 35 minutes, but the result feels like a leisurely meal.
Ask your fishmonger to descale and gut the bream before you bring it home. When you’re ready to cook, rinse the fish under cold water, pat it dry with kitchen towels, assemble the vegetables and citrus, and pop everything in the oven. Minimal fuss, maximum taste.

sea bream -
1/2
lime
sliced - Handful of fine green beans

Handful of baby plum tomatoes
halved
Instructions

Preheat the oven to 180°C/350°F/gas mark 4.

If not already done, descale, gut and clean the fish, then pat it dry with paper towels.

Drizzle a little oil into a baking dish and spread the green beans and halved tomatoes in the base. Lay the fish on top and tuck the lime slices into the cavity. Bake for 25–30 minutes, or until the flesh is white and opaque throughout.

Remove from the oven, serve immediately, and enjoy.
