Ingredients

  • 1-pound pork tenderloin*

Instructions

  1. Slice the onion into half-moon shapes and place in a gallon-size freezer bag.

  4. Remove the bag from the freezer the night before cooking and thaw in the refrigerator.
  5. Dump the entire bag into the slow cooker and cook on HIGH for 4–6 hours.
  6. After about 4 hours, test the pork by shredding with two forks; if it doesn’t shred easily, cook another hour.

*Pork tenderloins often come two per pack when they’re smaller (about 1–1.5 pounds each). You can double the recipe to make two freezer meals. Pork tenderloin is different from pork loin: it’s leaner, thinner, and smaller.
