Skillet Baked Apples are one of my favorite treats when the evenings turn crisp and the air feels like fall. Once I start opening windows instead of running the air conditioner, I reach for warm, comforting recipes — and these baked apples are at the top of the list.

Begin by choosing firm, ripe baking apples — one per person. My favorites for baking are Braeburn (used here), Rome, Jon Gold, Gala, and Granny Smith. Red and Golden Delicious are nice for eating fresh but can become a bit soft when baked, so I prefer the sturdier varieties for this recipe.

Wash the apples thoroughly since you’ll leave the skin on. I prefer keeping the peel for texture, and this approach keeps the preparation quick and easy.

Use an apple corer to remove about three-quarters of each core, leaving the bottom intact. The hollowed center will hold the sugar and spice filling, so don’t core all the way through.

Place the cored apples in a large oven-safe skillet. If you don’t have a skillet, a 13×9 baking dish works fine, but a skillet gives a nice presentation and helps the apples cook evenly.

For the filling, I mix ground cinnamon, nutmeg, and a hint of ginger with packed brown sugar. Combine the spices and sugar thoroughly so each spoonful is well seasoned.

Spoon a portion of the sugar-spice mix into each apple cavity. Top each filled cavity with a small piece of butter, then sprinkle a bit more of the sugar-spice mixture over the top.

Pour apple cider into the bottom of the skillet to add moisture and flavor as the apples bake. Cover the skillet tightly with aluminum foil and bake until the apples are tender and warmed through.

Baked Apples are a favorite recipe for fall. Filled with delicious sugar and spices and baked to perfection, baked apples are wonderful for entertaining or elevating the weeknight meal.

Ingredients

  • 6 equal size baking apples, Braeburn, Jon Gold, Granny Smith, or Rome
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/4 cup brown sugar, packed
  • 3 tablespoons butter, cut into six equal pieces
  • 1 cup apple cider

Instructions 

  • Preheat oven to 325º F.
  • Wash apples and remove 3/4ths of the core, leaving the bottom portion of the core intact. Place apples into a large oven-safe skillet.
  • Mix together cinnamon, nutmeg, ginger, and brown sugar. Spoon the mixture into the cavity of each apple. Top each apple with a piece of butter and a little more of the sugar-spice mix.
  • Pour the apple cider into the bottom of the skillet, cover tightly with foil, and bake for 45 minutes to 1 hour, until apples are tender.
  • Remove from the oven and serve warm, optionally with ice cream.
